I havent been writing because my work now has took over my life i dont know if you guys know that i am trying my best to be the very best chef or atleast a famouse one hehe now im working at a new restaurant here in New Mexico its been a hell of experience and i think im already harvesting all the time spent in school and through my other trianing. The resto has so much respect for my culinary background and expertise not that im bragging but im starting to think that im really good at what im doing. However its taking away my life outside the kitchen the only time that im in the kitchen is when i sleep in my bed other than that i would be in the kitchen planning new menu and stuff which is draining me so much that i always have melt downs during service time that screams in my head that i cant do this anymore i just want to be out and quit. Pressure in the kitchen is by the minute and it builds up everyday. I dont know how much longer im gonna last in this business before it burns me out. But one thing for sure i really do enjoy and love the faces of the people enjoying my food especially when they send "compliments to the chef" it makes it all worth it! My plan is to get a new camera so could really start posting my creations but conscidering how busy i am i just dont know sorry guys lol

I made this cake for a client they wanted a divinity icing very simple but the weather was to warm that it started to melt so i layered it with fondant to hold . They still got there cake though and a little extra! The celebrant likes to fish so go figure hehe
